All Cabernet Sauvignon (clones 4, 7 and 337), Cliff Lede's 2021 Cabernet Sauvignon Beckstoffer To Kalon avoids any excess ripeness, boasting elegant hints of crushed stone and pencil shavings against a backdrop of black cherries, cassis and dusty earth. Only medium to full-bodied, it's tart and silky—quite classic in style—finishing long and fine, with a dusting of fine-grained tannins. – JC
